Founded in 2013 in Kyoto's Karasuma Oike district, aca 1° (Aka) quickly gained attention and earned a Michelin star for four consecutive years in the “Michelin Guide Kyoto Osaka” starting in 2016.

Furthermore, since 2018, it has received the GOLD award for three consecutive years in “The Tabelog Award,” earning high acclaim both domestically and internationally.

So what exactly is the cuisine that made it one of Tokyo's most difficult restaurants to book after relocating to Nihonbashi (Mitsukoshimae) in the summer of 2020?
