昭和22年(1947年)に創業した荻窪の老舗店「丸長 中華そば店」は店主の体調不良を理由に2023年11月8日に閉店した。

豚骨スープに日本蕎麦の技法であるカツオ節やサバ節で旨みを加え現代のWスープを考案したと言われている。

創業者の青木勝治氏がまかないとして「ざるそば気分で」作ったのが「つけ麺」であり、これがのちのつけ麺で有名な「大勝軒」のルーツとなっている。

そんないまのラーメン界に多大なる影響を与えた店が惜しくも閉店し、この味を後世に残したいという想いから家系ラーメン店「わいず」のヤス社長が丸長の味を再現させた。
東京・大塚のラーメン店「中華そば 喜富」でそれが味わえる。

Marucho chuka-soba restaurant, a long-established restaurant in Ogikubo established in 1947, closed its doors on November 8, 2023 due to the owner's poor health.

It is said that he invented the modern W soup by adding bonito and mackerel flakes, a Japanese buckwheat noodle technique, to pork bone broth to add flavor.

Katsuji Aoki, the founder of the restaurant, created tsukemen (dipping noodles) “just like zarusoba,” which later became the roots of the famous tsukemen restaurant “Okashoken.

The restaurant that had such a great influence on the ramen world today sadly closed its doors, and the president of Iekei Ramen restaurant “WAIZU” recreated the taste of Marucho in the hopes of preserving this flavor for future generations.
You can now taste it at “Chuka Soba Kitomi,” a ramen restaurant in Otsuka, Tokyo.
