1982年4月、フランス・パリなどで修行を積んだ創業者・平松博利(ヒロトシ)氏(通称：平松宏之)によって東京・西麻布に開業したフランス料理の名店「ひらまつ亭」。
広尾へ移転し「レストランひらまつ」と改名後、東京を中心に日本各地に高級レストランを出店。

2001年にはパリに進出し、なんと4ヶ月後に日本人オーナーシェフとして初めてミシュランガイドで一つ星を獲得した。これは史上最短記録となる。

In April 1982, the famous French restaurant “Hiramatsu-tei” was opened in Nishi-Azabu, Tokyo, by the founder, Hirotoshi Hiramatsu (a.k.a. Hiroyuki Hiramatsu), who had trained in Paris, France, and other places.
After moving to Hiroo and changing its name to “Restaurant Hiramatsu,” the restaurant opened several high-end restaurants in Tokyo and other parts of Japan.

In 2001, he expanded to Paris, and four months later became the first Japanese owner-chef to win a star in the Michelin Guide. This was the shortest record in history.
