栃木県栃木市にある「うなぎ料理専門店 せしも」。
扱ううなぎは「共水うなぎ」。静岡県の株式会社 共水による養殖うなぎ。

いわゆる「ザ・ストレスフリー」の共水うなぎは通常の養殖うなぎの2倍の年月をかけ、天然うなぎに近いうなぎに育てられたブランドうなぎ。身のしまったきめ細かい肉質を持ち、「天然に限りなく近いうなぎ」と言われている。

さらに凄いのが共水うなぎの場合、養殖池の水温の調節によってバーチャルな四季を造りだし、1年半から2年の間に四季を5巡ほど繰り返して成魚へ育てている。餌は国内最高級のホワイトミールを使用。

ただでさえ共水うなぎを扱う店は少ないが、さらに共水うなぎのみを扱う店はかなり希少な存在であろう。
さて、そんな瀬下大将が焼くうなぎとは一体？

SESHIMO is located in Tochigi City, Tochigi Prefecture.
The eel we serve is “Kyosui Eel”.

The so-called “stress-free” Kyosui eel is a brand of eel that takes twice as many years to grow as a normal farmed eel and is close to a natural eel. It is said to be “an eel as close as possible to natural eel” with its firm and fine meat.

The Kyosui eels are raised to adulthood by creating four virtual seasons by adjusting the water temperature in the pond and repeating the four seasons about five times in a year and a half to two years. The feed used is the highest quality white meal in Japan.

Even in the past, there were only a few restaurants that sold eels made from the same water, but it would be quite rare to find one that only sold eels made from the same water.
