Minestrone

Difficulty: Easy
Time: 30min
Number of servings: 4

Ingredients:
4 bacon slices
100g (3.5oz.) onion
100g (3.5oz.) carrot
200g (7oz.) potatoes or beans
1 clove chopped garlic
400g (14.5oz.) canned diced tomatoes
800ml water
2 consommé cubes or 4 tsp. consommé powder https://amzn.to/3IaIohh
2 bay leaves
salt and pepper
50g~200g pasta *as much as you want is ok
parmesan cheese
parsley flakes
olive oil

Directions:
1. Cut bacon, onion, carrot, and potatoes into small pieces.
2. Heat olive oil in a deep pot, cook chopped garlic until fragrant. Add the bacon and vegetables and cook until onion becomes soft.
3. Add canned diced tomatoes, water, consommé, bay leaves, salt and pepper, then cover and simmer for 15 minutes. Add pasta and cook as instructed on the package. Serve in a bowl and sprinkle with parmesan cheese and parsley flakes (mostly just for color).

You can add water if necessary. Putting too much pasta will end up making pasta dish instead of soup but it is still good. Make as you want :)
